| The Creation of Extra Virgins
The mill, where the freshly squeezed juice of the olive is created, is an industry that is on its way to an ISO 22,000 certificate, and in which state-of-the-art Technology and extreme Hygienic Conditions are combined with generations of tradition and know-how.
Carefully cold-milled and with a very careful control of timing, our olives undergo a magic transformation from fresh fruit to wonderful grape juice in the hands of our Oil Masters.
The Preservation of the Oils and the Bottling
In Castillo de Canena, we also dedicate much effort and care to the storage and preservation of the oils.
Our cellar, which is equipped with air-conditioners, totally inerted stainless steel tanks, guarantees the “freezing” of time for our oils and the fact that at the moment of packaging, they have lost none of their organoleptic characteristics.
The bottling in the property differentiates us from most other oils as does the addition in each bottle of a small dose of nitrogen, a completely innocuous substance that nonetheless protects the oil from oxidation and rancidity, thus guaranteeing our customers the pleasure of an excellent taste.
