Avocado ice cream is a smooth, creamy, rich and most importantly healthy treat, that you can indulge guilt free. Avocado is a good source of monounsaturated fatty acids (which are an important part of balanced diet), as well as vitamin K, vitamin C, folate, potassium, vitamin B5, vitamin B6 and vitamin E.

INGREDIENTS:
- 3 Avocados
- 250 ml – 1 cup (approx.) Homemade vegan milk
- To taste – Lemon juice
- To taste – Coconut sugar
- To taste – Coconut sugar
- To taste – Plums
- To taste – Extra virgin olive oil: Castillo de Canena Family Reserve Arbequina
- To taste – Chocolate soil; for example crumbled Chocolate & Bean Muffin
PREPARATION
Add add avocado, almond (or oat) milk, few drops of lemon juice and optionally salt and sugar to a blender and process until smooth. Transfer to a freezer safe dish or ice cream from. Freeze until firm. Caramelize the plums. Serve with chocolate soil (for example crumbled Chocolate & Bean Muffin) and top with caramelized plums.
Assemble the dish as in the photo or to your liking.
