Valentine’s Day Menu: Lamb chops with mint sauce and baked potatoes with rosemary

Ingredients

3 or 4 lamb chops per person aprox
Fresh mint
Champagne vinegar
Castillo de Canena Family Reserve Arbequnino EVOO
Castillo de Canena Family Reserve Picual EVOO
Potatoes of excellent quality
Fresh rosemary

Preparation

Wash, peel and cut potatoes into slices. Bake them with extra virgin olive oil Castillo de Canena Family Reserve Picual, rosemary leaf and a pinch of salt, for about 20 minutes.

We wait until potatoes are close to be finished, in order to start preparing the rest of the dish.

While the chops are being sauteed, prepare the sauce with chopped mint, vinegar Champagne & Castillo de Canena Family Reserve Arbequina EVOO.

Serve the chops sauteed and sprayed with the mint sauce and accompanied by some hot potatoes.
