Grill the meat until browned and well seared.
Then add salt and pepper and place in the oven (previously preheated to 200º).
Let it roast for about 30 minutes approximately, so that it is juicy, a little pink inside. Cut into thin slices.
For the sauce, we will mix well the cane honey, the old mustard, the tarragon and our extra virgin olive oil Reserva Familiar Picual. Mix well.
We will cut 3 slices of Triticum 5 Cereals bread and we will intersperse thin slices of roast beef, emmental cheese, sweet gherkins (previously cut) and rocket.
Top each layer of sandwich with the sauce. Serve additional sauce on the side.
