We will prepare a mayonnaise with a very special touch with our extra virgin olive oil Reserva Familiar Arbequina and sherry vinegar!
Put some of the eggs in a narrow bowl with a few drops of sherry vinegar and AOVE Reserva Familiar Arbequina Castillo de Canena, trying not to break the yolk of the egg.
With the mixer, first we beat the yolks and we go up the arm little by little until the mixture emulsifies. Finally, add salt to taste.
We will open the bread and make a lettuce base, which will serve as a bed for the cooked prawns (previously peeled) that we will place next and that we will bathe with the previously prepared mayonnaise.
