Recipe for a Chinese New Year Menu: Green Asparagus with Extra Virgin Olive Oil Mayonnaise - Royal Temprano.
- Green asparagus
- 1 egg
- Extra virgin olive oil - Royal Temprano Castillo de Canena
- Lime juice a file
- Salt to taste
Grill the asparagus until cooked.
For the mayonnaise, place the yolk of one egg, the juice of one lime and the Royal Temprano Extra Virgin Olive Oil in a narrow bowl, taking care not to break the yolk.
With the mixer, first beat the egg yolks and gradually raise the whisk until the mixture emulsifies.
Finally we add salt, if we think it is necessary.
