For starter this christmas dinner we propose this delicious Lentils with Foie made with our Family Reserve Arbequina extra virgin olive oil.
1 clove of garlic
3 sweet white onions
Block of foie to make cubes
Family Reserve Arbequina EVOO
Keep lentils soak during some hours before cooking.
Sauté the onion, tomato, pepper and crushed garlic clove, with some Extra Virgin Olive Oil. When browned, mix with the beater and place into a pot with lentils and some water.
Simmer until tender and then season with some pepper & salt.
Onion marmalade: cut the onions into thin slices and put into a pan with Castillo de Canena Family Reserve Arbequina & three tablespoons of brown sugar.
When the jam is done, mix with two tablespoons more of Family Reserve Arbequina EVOO.
Finally, cut the foie into cubes.
Presentation in a bowl: onion marmalade first, very hot lentils over it & finish with the cubes of foie, salt and Family Reserve Arbequina.
