Try this delicious and easy appetizer!!



  • 1 Egg for the mayonnaiseEVOO_Taidetud_munad_Castillo_Canena
  • Eggs (depending on the number of guests)
  • Castillo de Canena Family Reserve Arbequina EVOO
  • 1 tbsp. chives, chopped
  • Some lemon juice
  • coarsely crushed black peppercorns
  • salt
  • Garnish: sprat fillets, caviar, cucumber slices chives or raspberries.



First, let’s prepare the mayonnaise: in a narrow blender cup, add a yolk, some lemon juice and the Family Reserve Arbequino extra virgin olive oil. Begin beating the yolks at the base of the cup and slowly move upward until the mixture becomes emulsified. Add salt to taste at the end if needed.

Now, cut hard-boiled eggs lengthwise in half. Scoop egg yolks out and mash them with a fork in a small bowl.

Mix the chopped chives, mashed egg yolks, salt, and a pinch of pepper and mix again with the mayonnaise that we have prepared before.

Fill the eggs- whites with the yolk mixture. You can use a pastry decorating to do it.

Garnish as you like!
