TASTING NOTES
Surprising nose. Extremely evocative. Hints of roasted nuts, fine wood (woodwork), ripe fruit and mushrooms (St. George’s mushroom). With a delicate hint of sherry.
The first taste is mild and elegant. Smooth and sweet on the palate. Complex and rich with a full range of nuances. Notes of iodine, roasted hazelnuts, intermingled with hints of ripe avocado. The finish clearly reveals traces of barrel wood, a hint of medium-dry sherry with an “umami” nuance that makes it perfect for seasoning a wide range of dishes and raw ingredients, from the simplest to the most elaborate.

Extraction method/process | Cold extraction through a two-phase system where the best quality and hygiene conditions are guaranteed. When they arrive at the factory, the olives are first subjected to a light washing with cold water before going on to the phase of pressing, beating and subsequent centrifugation to obtain the juice, all carried out using stainless steel machinery and controlling times and temperature throughout the process. Cellulose filtering is the last step prior to warehouse storage in refrigerated and inert tanks. Maximum of 3 hours from harvest to pressing. Finally, the oil is refined in oak barrels to add flavour. |
