  • Green asparagus
  • 1 egg
  • Extra virgin olive oil - Royal Temprano Castillo de Canena
  • Lime juice a file
  • Salt to taste


  • Grill the asparagus until cooked.
  • For the mayonnaise, place the yolk of one egg, the juice of one lime and the Royal Temprano Extra Virgin Olive Oil in a narrow bowl, taking care not to break the yolk.
  • With the mixer, first beat the egg yolks and gradually raise the whisk until the mixture emulsifies.
