The recipe for roast chicken with apples and extra virgin olive oil consists of rubbing the chicken with olive oil and seasoning with salt and pepper, stuffing with reinette apples and cooking together with fuji apples and potatoes in a 180°C oven.

Ingredients
  

  • 1 super free-range chicken
  • 1 kg reinette apples
  • 1 kg fuji apples
  • Extra Virgin Olive Oil - First Day of Harvest Picual
  • Pink pepper from kampot
  • Coarse salt
  • Potatoes
  • 1 lemon

Instructions
 

  • Wash the reinette and fuji apples, cut them in eighths, remove the core and soak them in the lemon juice.
  • Clean the chicken inside and out.
  • Prepare a mixture of salt and freshly ground pepper, mix well.
  • We spread the chicken with our Extra Virgin Olive Oil - First Day Picual Harvest, massaging the chicken so that it is well impregnated.
  • Spread the salt and pepper over the entire surface so that it is well covered on all sides.
  • Repeat the operation inside the chicken and fill it with the reinette apples, until there is not even a hole left.
  • We sew or close with toothpicks.
  • We put in a dish with the potatoes, cover with aluminum foil and put in the oven at 180ºC, for an hour to check the cooking and remove the potatoes.
  • Add the fuji apples to the chicken and put it in the oven uncovered, first from the bottom and then turn it over, at the same temperature so that it finishes cooking and browns on all sides. We water it with the juice it releases until it is ready.
  • Cut the potatoes in half, spread them with AOVE Primer Día de Cosecha Picual, salt and pepper them, and put them in the oven to brown and crisp.
