Sirloin steak with Bearnaise sauce and smoked oil

Recipe for cooking a steak with Bearnaise sauce with Extra virgin olive oil - Castillo de Canena with oak smoke.

Ingredients
  

  • 1 sirloin per person
  • 2-3 tablespoons extra virgin olive oil - Castillo de Canena oak smoke
  • Salt
  • 1 tablespoon finely chopped onion
  • 2 tablespoons vinegar
  • 2 tablespoons cold water
  • 1 tablespoon parsley
  • 4 egg yolks
  • 1 teaspoon corn flour
  • 75 g butter
  • 75 g extra virgin olive oil - Arbequina
  • lemon juice half a lemon
  • Salt
  • Pepper
  • 3-4 tarragon leaves

Instructions
 

  • Put the Castillo de Canena oak smoke oil on the meat, not in the pan. Roast the meat in the pan on all sides until it is seared on the outside and juicy on the inside. Add the salt.
  • Melt in a casserole the mixture of butter and oil with Castillo de Canena oak smoke over low heat without boiling, and once melted, set aside.
  • In another casserole we poach for two minutes the very small chopped onion (brunoise) and the vinegar, add the water and the lemon, the egg yolks and a pinch of cornstarch.
  • Stir with a wooden spoon and place this mixture in a bain-marie. To do this, we put it in another pan with water and put it on the heat so that the pan with the yolks is hot but not on direct heat.
  • When the sauce is thickening, remove it from the bain-marie and add little by little the mixture of liquid butter and oil to the oak smoke, stirring constantly as if it were a mayonnaise.
  • Once all the smoked butter and oil mixture has been added and the sauce is thickened, add the parsley, salt and tarragon.

Instructions
 

  • To prepare the honeyed ribs, mix the honey, soy sauce, ketchup and Castillo de Canena Arbequina Smoked Oak Arbequina olive oil (the little turquoise blue bottle).
  • Spread the mixture on the ribs and cover. Leave in the refrigerator for 3 hours (they can also be prepared the day before).
  • Then bake at maximum temperature for approximately 1 hour, it is important that the meat comes off the bone well.
  • Next, we will prepare the mayonnaise with two of our oils: half with Arbequino al Humo de Roble (the same we use for the marinade for the ribs) and the other half with extra virgin olive oil First Day Harvest Arbequina and a few drops of lemon or vinegar.
  • We put the egg, with the drops of vinegar or lemon juice and the two mentioned oils in an elongated container. Beat with the mixer until the mixture emulsifies. Add salt, according to taste.
  • To assemble this rustic sandwich, we have chosen a thin but resistant bread. We will put a first base of slices of spring onion and tomato. Next, the meat of the ribs (that we will have previously separated) and we finish with some sprouts or germinated (the ones you prefer).
  • We decided to use the mayonnaise as an accompaniment sauce, but you can also add it to the sandwich!

Instructions
 

  • Cut the scallops and fresh shrimp into small pieces, they will be our tartar.
  • We also chop the red chili very finely.
  • Mix everything together with the lime zest.

  • Cortamos las zamburiñas y las gambas frescas en pequeños trocitos, serán nuestro tartar.
  • También picamos el chile rojo muy finito.
  • Mezclamos todo junto con la ralladura de lima.
  • Presentamos en forma de tartar y disponemos el caviar por encima.

Roast chicken with apples and extra virgin olive oil

The recipe for roast chicken with apples and extra virgin olive oil consists of rubbing the chicken with olive oil and seasoning with salt and pepper, stuffing with reinette apples and cooking together with fuji apples and potatoes in a 180°C oven.

Ingredients
  

  • 1 super free-range chicken
  • 1 kg reinette apples
  • 1 kg fuji apples
  • Extra Virgin Olive Oil - First Day of Harvest Picual
  • Pink pepper from kampot
  • Coarse salt
  • Potatoes
  • 1 lemon

Instructions
 

  • Wash the reinette and fuji apples, cut them in eighths, remove the core and soak them in the lemon juice.
  • Clean the chicken inside and out.
  • Prepare a mixture of salt and freshly ground pepper, mix well.
  • We spread the chicken with our Extra Virgin Olive Oil - First Day Picual Harvest, massaging the chicken so that it is well impregnated.
  • Spread the salt and pepper over the entire surface so that it is well covered on all sides.
  • Repeat the operation inside the chicken and fill it with the reinette apples, until there is not even a hole left.
  • We sew or close with toothpicks.
  • We put in a dish with the potatoes, cover with aluminum foil and put in the oven at 180ºC, for an hour to check the cooking and remove the potatoes.
  • Add the fuji apples to the chicken and put it in the oven uncovered, first from the bottom and then turn it over, at the same temperature so that it finishes cooking and browns on all sides. We water it with the juice it releases until it is ready.
  • Cut the potatoes in half, spread them with AOVE Primer Día de Cosecha Picual, salt and pepper them, and put them in the oven to brown and crisp.
